Welcome to Rooted Cookery!

Rooted Cookery was founded on the belief that food should be both delicious and nourishing. Our main focus is on quality whole plant foods, natural sweeteners, and minimal or no oil cooking. But we also believe that cooking should be fun and flexible—so you might just find a sweet treat in the mix too! No matter what we’re making, you’ll learn practical, healthy cooking skills to bring into your own kitchen.

Whether you want to boost your cooking confidence, eat healthier, or just have fun in the kitchen, we’ve got a class for you! We offer options for kids, adults, and families, so everyone can join in. You’ll leave feeling inspired, empowered, and ready to create meals that are as good for you as they are delicious.

We also host birthday parties and special events. Check out our classes page to learn more.

MEET YOUR INSTRUCTOR

Adriana Dwan
Founder

Hey there! I'm Adriana, a cooking instructor based in Colorado. I’m passionate about creating delicious plant-based meals that are good for you and the planet. I’d love to show you how eating healthy can be exciting and delicious.

My journey to a plant-based lifestyle began 25 years ago when I learned about the realities of animal farming. This discovery prompted me to switch to a plant-centered diet, a change I’ve never regretted. I have since learned how to make my own condiments, dressings, burgers, and more. These are the skills and recipes I want to share with you so that you can also experience the benefits of a plant-based diet.

Through Rooted Cookery, I want to show that eating plant-based doesn’t mean giving up flavor or feeling restricted. Healthy eating should be satisfying, enjoyable, and something you can stick with long-term. It’s all about balance—nourishing your body while still loving what’s on your plate.

I've honed my skills through training at Rouxbe Online Culinary School, specializing in plant-based cooking. I’m also certified in plant-based nutrition with eCornell and the T. Colin Campbell Center for Nutrition Studies.

Here are some fun facts about me:

Growing up in a hispanic household, I ate beans and rice on the regular and to this day it’s still my favorite comfort food.

Fantasy books are my absolute favorite. Dragons and magic? Count me in!

Halloween is my favorite holiday and I love dressing up with my family.

My favorite food quote:

“The most ethical diet just so happens to be the most environmentally sound diet and just so happens to be the healthiest.”
